2. ENTRÉE BUFFET MENU

These items are main course items that can be presented at a buffet.  They are arranged here assuming that they will be the main course of your dinner. These items are portioned so that  your guests       may have some of each item, they do not have to choose between them. If you would like to add one of these items to items from our other buffet menus, please inquire with us because the amount served may then vary depending upon how many other items you order (we will be happy to explain this to you).  These items include a served salad, fresh baked rolls and butter, and a vegetable dish and a starch dish at the buffet.CHOOSE  ANY TWO $28.00 per person  (add a third for $5.00):

3. HEAVY HORS D’OEURVES BUFFET MENUS

We have an extremely wide array of items available for a buffet at Bube’s Brewery. We have collected a vast number of recipes over the years and we have honored many special requests, keeping the best of them in our repertoire. If you have a special request, or an item that has been a tradition in your family for years and you want to have it at your function, please let us know. If at all possible, we will try to make it for you.

Here is a list of things you may want to know about buffet dining for a group:

  • Buffets can range from very gourmet to very casual and all points in between.
  • At most buffets, there are some lighter items out as guests arrive and the main items are  presented once everyone has arrived.
  • If time is of the essence, buffet dining is the fastest way to get food to your group—no ordering, no waiting.
  • A buffet is the best way to present a variety of foods to your guests without having to preorder.
  • A buffet can include an optional soup course, a salad course, and/or a dessert course that is/are served to the guests giving the dinner both the feel of a served dinner and a buffet.
  • An ideal buffet menu has something for everyone:  meat item(s), poultry item(s), seafood item(s), cheese, bread, vegetables, salad, starch, and possibly fruit, nuts, and snacks, and of course, dessert. A balanced menu includes different colors and textures, making the buffet attractive, and a good mix of hot and cold items is important. We encourage you to think freely at first, simply picking any items from these menus that sound  good to you, and then working with us to achieve a nice balance and a budget that you are comfortable with.
  • The buffet menu is presented with several types of categories, please feel free to pick anything that you want from any group of items. Don’t be afraid to mix styles and types of food, a good variety is desirable. Vegetarians are generally fine at buffets as long as there are a selection of items that have no meat in them. As always, if you have a person with some dietary limitations, please let us know and our chef will accommodate them.
  • Don’t be confused by the fact that some items appear in more than one category.
  • We can do a buffet in any of our venues, we generally ask that a buffet group should have 25+ persons

A. CLASSY CLASSIC BUFFET – $34.00 PER PERSON

  • For Groups of 20 or more
  • Includes several choices (up to 2 substitutions ARE allowed that cost the same or less than the substituted item. Items that cost more than the substituted item, please add the difference)
  • Served buffet style
  • Can be arranged as a three course presentation (appetizers at arrival, main items second, dessert third, Salad can be served as a fourth course)
  • Includes a full range of items including, meat, seafood, poultry, vegetable, starch, cheese, bread and dessert.
  • Total charge with 6% tax and 18% gratuity is $42.16 per person

    • Sausage En Croute – A sausage and herb mixture baked in a puff pastry crust served with a mustard sauce.

    • Chicken Satay – Chicken breast skewers in a Thai marinade, deep fried and served with a peanut dipping sauce.

6. BEVERAGE OPTIONS

At Bube’s Brewery, we have both a brewing license and an alcoholic beverage license. Your options include offering some hand crafted beer made by our talented brewing staff from our own microbrewery  (Bube’s Beer); beers from approximately 20 other breweries; a wide selection of wines by the bottle, carafe, or glass; and mixed drinks of all types. Non-alcoholic beverages include sodas, punches, teas, coffees, and sparkling or still bottled waters. The first thing for you to decide is whether your function will include an open bar, limited bar, or a cash bar:

  • Open Bar – you will be paying for your guest’s beverages.
  • Cash Bar – your guests will be paying for their beverages, except for coffee, hot tea, and ice water which we include in all group menu options except for groups ordering from one of our regular restaurant menus. There is a $75.00 fee to have a cash bar available.
  • Limited Bar – you will be paying for beverages that you prearrange and your guests will be paying for any beverages not included with your bill (except coffee, hot tea, and water as mentioned above).

7. CUSTOM MENU DINING

This option is designed for smaller banquets (30 or less) that would like to order their dinners upon arrival (rather than ahead of time) and would like a full range of options for their guests. Essentially you are taking your group out to dinner at our restaurant and eating from the regular menu except that we have limited it somewhat to facilitate our staff’s ability to handle a larger group. We can personalize the special menu that we print for your group with anything you would like printed on the menu.

8. FEASTS

This is a special entertainment dinner offering that is available only in the Catacombs. If you have a group for which a lively, absolutely unique dinner would be appropriate, please consider this option. If you are considering a feast, please see the accompanying info about feasts (there is no written menu per se – the feast is a completely planned dinner, the dinner being part of the show).

For any banquet we appreciate your best guess of the number coming one week in advance. You are welcome to update that number up to the day of the banquet. We will charge you for the last number that you give us. If you are unsure of a few, you can give us a guaranteed number and have up to 4 optional extras that we won’t charge you for it they don’t make it. In that case, your last guaranteed number will be the minimum that we charge for.
